I am currently considering the Masterbuilt 560, 800 or 1050 because I want to start a cottage BBQ business here in Chicago and still be able to sleep at night. My souped up Webber Kettle has done great, but can only do one brisket at a time. How many briskets could you do at once in the 560 vs. 800 vs. 1050?

If you buy an extra shelf, so you have three shelves, you can do 3 in the 560. I would estimate 4 in the 800 and maybe 5-6 in the 1050. This is based on what I do which is usually a 14-15 pound brisket. If you are doing 20 pound monsters, I’d expect less to fit.
If you are planning overnight cooks, I would use B&B briquettes or charlogs. You can find them at Ace’s Hardware.Last edited by STEbbq; October 30, 2022, 11:58 AM.
