I should have mentioned this before, but when you are passing through these small Texas towns be sure and check out the courthouses. If you happen to get to Hallettsville, be aware that the courthouse there was used in the movie of "The Best Little Wh***house in Texas." I've been told that some of the cast and crew stayed in Luling, home of City Market, as johnjohn pointed out above. The establishment itself (no longer in existence) was near LaGrange.

I don’t how the stuff that guy did exposing corruption, fraud and board of health reports didn’t get him killed. I had the opportunity to meet him once back in the mid-1980s. I was filmed in my boy scout uniform raising the American flag on the KTRK campus for a PSA commercial. He came out and signed some Channel 13 stuff for me.

I of course love smoked meats of all kinds, but also like quick cooks like chicken portions, pork tenderloins, steak and fish. Really into cooking of all kinds.
My outdoor kitchen has a Lone Star Grillz Adjustable and it is wonderful. There also is a Pit Boss 5 Burner Ultimate Griddle and a Pit Boss Copperhead pellet grill.
There is an outdoor fire pit that has grilling capability and limited Santa Maria-style grill raising and lowering.

True that, I've seen a bunch of them over the years. They all have a little (or maybe a lot) of Texas lore about them. Here's the one in Lockhart (Caldwell County) where CaptainMike and I had Sunday lunch. It's funny how different people's perception and experience are totally different. I would agree that the one time I did the Franklin experience it was top notch and probably the gold standard. That said, Killen's (as well as several others I could mention) do it just as well. Kreuz; however, has disappointed me the last two times I was there. As I mentioned in another post, we had lunch last Sunday and the brisket was stringy and "pot roasted" which indicates overcooked. It wasn't any better than Dickey's. Perhaps we got a bad sample, but two times in a row for me is enough to say thanks but no thanks to Lockhart.
As to Franklin's not being open, we had that discussion at the meat-up but I guess you weren't in on the conversation. They announced opening up at the latter half of June but only had curbside at the moment. That said, it was good that you at least got to try it but count your blessings you didn't have to stand in line for 5 hours. The restaurant inside is small and doesn't add much to the experience.
Where to next wcpreston? I'm enjoying your adventure !!

BTW... agree w/you on The Salt Lick. What my wife liked was the more subtle beef-forward flavor, rather than tasting salt and pepper too much. It's also the only place I know to get bison ribs, which were pretty dang good. Oh, and that cobbler was amazing.

I am loving your journey. There was a post after the pandemic started about the hoarding of toilet paper questioning whether there would be enough food to use all the toilet paper. Now the question is, do you have enough toilet paper? LOL
