The DW and I are on a 2-month sojourn. Most of it is in one place, and I brought my kettle to do a little cooking while there. But it's been too long away from my main cooker (I'm a rookie at the kettle and SnS), and right now we're on the road driving through Texas. OK, let's try out some Texas brisket. I'm not going to name restaurants, but so far, meh. I can do better, to my taste. I've gotta admit I'm only getting one shot at each place, so I can't adequately judge. The main point I"m learning is that following all the recipes and advice from this Pit makes for much better Q than is available at most places where they must put out a lot of food. Of course there are notable exceptions, but I've not had the opportunity to hit those places yet. It IS fun, though, eating a lot of Q and comparing. If I find a great one, I'll share who and where. Meantime I'll just look forward to cooking my own in about a month or so.

Just buy some chicken parts - whichever you like, and run the Weber and SnS as hot as you can. Rub as desired and pull when done. That will help some.And have fun on your trip.

Deaf Arty I know the pain of being separated from your cooker having been separate from mine far too long as we commuted back and forth from Dallas, but you are are a wise man to take a cooker. That's what I did with a Jumbo Joe. I don't know where you are traveling in Texas, but if all possible stop at Lockhart and go to Smitty's, Blacks or Kruez. I know your disappointment from sampling famous BBQ joints across the country. I like the Clod at Smitty's and the sausage at Blacks. The Clod is like a pork shoulder from the cow which I like it better than Brisket. I don't think you will be disappointed.

Thanks for the support, everybody. Yeah, I'm learning more and more about my kettle/SnS, and that's a good thing. RonB I did the chicken the other day and it was tender and juicy. I'm getting there. Right now, though, even the kettle is unavailable. It's back @ the RV in New Mexico. Won't see it again until next week. But meantime, we made it to Stanley's in Tyler. Great pulled pork. And Huskee it is nice to realize that I do put out some pretty good Q after all, like all of us here in the pit.
