Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

I picked one of these up as well. I usually don't go whole muscle like this too often, so I'm looking forward to cutting my own custom steaks and having a nice prime rib roast as well.
Question- do y'all wet age these like briskets or just process once you get 'em?

Chuppy With briskets I just leave them in the package they come in (the heavy cryovac) and keep them on the shelf on the fridge for 60 days, 70 max. I will add 14 days before the "packed on" date, if yours shows that, that is what I've been told is realistic from when it was actually processed. So for instance if it says Packed On January 3, I will go backward 14 days from there (Dec 20) and count 60 days from Dec 20 and that's how long I'll keep it in the fridge. Never done it w/ whole ribeyes

Huskee I just cut them and freeze. Last one I cut in half, a large roast and the rest steaks.
It is supposed to arrive unfrozen. My last one was frozen solid as a rock. I called and they said it was fine to partially thaw, then cut and refreeze; this turned out to be true. The steaks lasted a year+.

Just ordered one. Was a little hesitant as two previous orders (pork butts) from them arrived too warm. They refunded me, but what a waste. Being winter time will hopefully avoid the same thing with this. I made a note about this to them during the check out process.
Since this will be my first time for a purchase like this, I plan on cutting them into 1 - 1 1/2" steaks and vac seal freezing them. Anyone have any suggestions or tricks on how to cut them evenly and consistently so they are an even thickness?
My brisket knife is 1.5 inches wide so I just laid it on top of the meat to eyeball the right distance and sliced. Worked out pretty well for me. It helps if the meat is cold.

Crazy fast delivery. I ordered mine Tuesday morning and it arrived Wednesday morning. Supposed to be 16-18lbs. Mine was 19.6lbs and nicely trimmed. Sliced up eight 1.5" thick gigantic steaks and left a 5.5lb hole roast. Thanks Mosca

I just hit the freezer for burgers for tonight, I still have maybe half a dozen steaks from the last time I ordered there. I might make this one into two roasts.
They're obviously out west as I also ordered Tuesday morning but my delivery isn't scheduled until tomorrow early afternoon. I'll be happy if mine looks as good, though.
This looks like my counter this morning. Cut each 1-1/2†thick except ends. Weights per steak between 1.5 and 1.7 pounds, and that after some trimming of each one. Quite happy.
