I forgot to mention that I bought the gadget that will allow me to do indirect heat on the Weber kettle 22 inch. Any hints or tips for using this would be appreciated as well.

I assume your talking about the SNS.
Make sure that your lid seals well. This will save you a lot of headaches. If it does leak, try using black paper binders to hold the lid tight.
Always make sure your top damper is above your food, and opposite the fire. This will pull the smoke across your food and out the stack.
Get a hinged grate. This makes it easy to add fuel and smoking wood.
Make sure when you are adding water to the reservoir, you use HOT water.
For HI HI temp searing, use a good quality LUMP charcoal. This will make your fire hotter.Last edited by Spinaker; February 7, 2017, 05:48 PM.
