    Meat hooks for smoke EZ

    I have been fascinated about folks talking about use of the PBC and the Gateway looks really awesome.
    I have a Smoke EZ (SEZ) collecting dust in storage and thought about experimenting with it.
    Some questions :
    - the SEZ's height is 14.5.
    - I read distance from kettle (W22.5)? grill rack to charcoal rack is 5".
    - I don't know what the height of the hanging rack of the SEZ is but it has to be less than height of kettle lid (I read 8 3/4 but that included the handle)
    - What length hook/s would work best (most likely chicken / ribs to start)
    - which ones to purchase?
    (I am an amazon guy but the ones I saw did not look right)
    - the SEZ includes ring + water bowl
    - cook with water or no?
    - my desire would be to experiment hot and fast (HaF)? not low and slow (LaS)? without having to refuel
    - if no water pan should I use diffuser of some sort (cast iron pan or something like)?
    - anything else I'm missing or other suggestions?

    The project of dusting off the SEZ is such a farce truth be told. I just want to hang meat, go HaF, turn out great Q and be able to say to the GF, "Honey I really think we need to get a barrel cooker for your family's bbq on labor day. Already sent her brother the link to get him on board.

      Don't tell your gf I said this, but there is room in the SEZ for 2 or 3 grates - why do you need to hang meat?

        You're totally correct of course and a voice of reason.
        It is more of a desire to experiment with something new and to play with higher temps. The SEZ works very well but I don't believe I've used it 5 times. No reason except that I have not had the need to smoke a high volume and an addition of a hovergrill is enough. I sense the SEZ is bound for the CL.
        Basically just looking to play around. Plus if it works I have tending to the fire as an excuse as to why I'm not socializing. I love using the culinary responsibility as my anti social out.

          I am curious if you ever purchased any hooks for your SEZ? I went our local BBQ store, http://www.helpingubbq.com/ , over my lunch hour with every intention of buying the 22.5" version. As luck would have it they were out but just happened to have one 26.75" model left in stock. Long story short, I pick up the large SEZ tomorrow and have been pondering ordering some hooks and a hook puller from PBC.
