Rubber handled Rapala fillet knife. Never loose grip no matter how greasy your hands get, super sharp, and cheap. Never found one better, used victorinox and Dexter Russell before as they seem to be the most commonly reccomended, but the RAPALA beats them both imo

Yup that's the one. In his book Franklin Barbecue: A Meat-Smoking Manifesto, Aaron Franklin says his favorite knife for slicing brisket is the Dexter 13463 S140-12SC 12-Inch Scalloped Roast Slicer Knife. I got it a few years ago and it's a sweet slicer.Originally posted by jlazar View Post

- If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
STEbbq I will throw into the ring the two CHEAP knives I got a couple of years ago - I think recommended on the Pit - that make trimming fat a breeze:

Both are VERY VERY sharp! Be careful.
I am not sure how it takes an hour to trim a brisket. I just get the most obvious places on the fat cap to thin them down, then roll with it. Then again, I've never tried to separate the flat and point pre-cook.

Thanks! I bought a Rapala as I mentioned earlier!
I have been doing brisket for about 5-6 years now, and this was the first one that took that long to do. Most are maybe 30-40 minutes. It did seem like it was a particularly fatty cut of meat (prime from Costco which is weird), but I was also trying to trim off more than I do usually because I felt some of my earlier briskets had too much fat for my taste.
I have added the brisket slicers and guards to my wish list for future use! Thanks again
