On a related subject, I just bought a new cutting board from this place. Got mine a few weeks ago. I really like it. You can get it inscribed with variations of their offerings, or your own. They have a huge selection of different boards to choose from. Mine was $45. It’s notSpinnaker quality, but pretty good. Thought I’d share this link if anyone’s interested. So I've been super happy with the Worksharp E5, I could not get an edge on the Misen chefs knife that I was happy with. I love the feel of the knife and it's a good price but I was about to give mine to a family member until I got the E5. It also helped me put a consistent edge on a few cheapo version Henkels I have and I love those again now too. It's easy to switch the guides and the belts and it does a great job.

Spyderco sharpmaker stays in the kitchen for touch ups.
worksharp is for when the need more work, or as others have said, when those new Misen knives need to be "adjusted". I love the new Misen, but I had to reprofile it to my liking first. I have the older worksharp- great for garden tools etc also.

Tormek sharpening system for the carving tools followed by a leather strop because it is relaxing.
Steel sharpening steel followed by a sapphire stone steel for the kitchen knives.
2 minutes once a month on the ruby steel keeps them sharper than they really need to be.
(I do free hand but still wear a glove on the steel hand because I'm a pansy!)

Well I just sharpened some of my knives last night with my new Worksharp E-5. And it does work great! I only did a couple of them, but they both shaved hair off my arm now. This was a great suggestion from several of you and wanted to say thanks again. My knives haven’t been this sharp since I first got em many years ago. And it is so easy to use and fool proof.

Good choice Panhead John. I got mine a little over a year ago and am really pleased with the use of it and the results. I recently sharpened my hunting knives for the upcoming deer season and I can say I am now officially afraid of them. Just kiddin' . . . I hope I get the chance to use them.

Hi, I also like the WorkSharp products.
As I will work as American BBQ assistance for large caterers or private parties. I specifically chose not to buy very hard knifes.
Nothing against them. But I don't mind passing some small touches on a knife manually. And on a 56-57 HRC that isn't really too often at all.
First rule is to wash them with light soap and dry them directly. As chemicals are the main cause of knives becoming dull. And dishwashers are fatal!
As I wanted to go lightweight, compact and with adjustable angles. Because chopping or filleting knives have different sharpening angles.
I have searched for a manual sharpener with adjustable angle settings.
And in the end I went for;

jfmorris, Yep that was the reason for me too. I like it in combination with the relatively normal hardness of my knives. And as said it makes easier, but hardly ever needed sarpening for the relatively low real life usage we give them.
