I’ll start out by saying I ain’t the best knife sharpener dude out there….I just don’t have the patience I guess. I’ve bought several knife sharpeners over the years, some better than the others, and used em with varying degrees of success. My first set of quality knives was from J.E. Henckels, followed by a set of Wusthof knives a few years ago. While they were great knives, I just didn’t care for having to sharpen em so often, lazy I guess. I know I know, if you want sharp knives you have to maintain the edge. Did I mention I’m a lazy bastard?
Late last year I spent a little time here and there checking out different brands of knives and reading tons of reviews. I came across a knife company I’d never heard of before, Wakoli. They make Damascus steel knives and I thought they were also…. pretty damn good looking! While I’d heard of Damascus steel knives before, I really didn’t know much about em. Apparently it’s a harder steel and able to maintain a sharp edge longer than others…..perfect! Review after review talked about how sharp these were, and almost every review was praising the quality, especially for the price. A few of the reviewers were professional chefs and said they were among the best they’ve ever used. I was sold! After selling my Wusthof knives on Craigslist, I picked up a 6 piece set of their knives along with 4 of their matching steak knives. After using them for about 5 months now, here’s my thoughts……

When I first saw them I really liked the look of em’, these were the best looking knives I’ve ever owned….IMO. I was also impressed with the heft of the handles and how they felt in my hands. I could feel the quality of these things just holding them. I also liked the look of the blades themselves, courtesy of being Damascus steel. According to the mfgr’s website they’re made of 67 layers of Damascus steel. Any decent brand of knives are gonna be sharp when you first use them and these were too, incredibly sharp! My first test was the ol tomatoe test….cut right through them easier than I thought they would. Holding a piece of paper in one hand and the chefs knife in the other, sliced right through with ease. Anyway, I’ve used these knives for almost 5 months now, averaging 2-4 times per week. I use an OXO plastic cutting board the majority of the time and occasionally a wood cutting board. I can honestly say these knives seem to be just as sharp as when I first got them….and I haven’t even used the hone one time yet. The knives I got were…..chef’s knife, a Santoku knife, a carving knife, bread knife, a small Santoku and a paring knife [they call it an office knife…🤷♂️] I’m no expert on knives, just the opposite, but these are the best knives I’ve ever owned, they’re super sharp and hold their edge for a long time. For around $300. for all six knives, I consider them a bargain for this kind of quality. The 4 matching steak knives were about $139. Anyway, if you’re in the market for some really good knives, give em a look.
