    Wakoli Damascus Steel Knives….A Review

    I’ll start out by saying I ain’t the best knife sharpener dude out there….I just don’t have the patience I guess. I’ve bought several knife sharpeners over the years, some better than the others, and used em with varying degrees of success. My first set of quality knives was from J.E. Henckels, followed by a set of Wusthof knives a few years ago. While they were great knives, I just didn’t care for having to sharpen em so often, lazy I guess. I know I know, if you want sharp knives you have to maintain the edge. Did I mention I’m a lazy bastard?

    Late last year I spent a little time here and there checking out different brands of knives and reading tons of reviews. I came across a knife company I’d never heard of before, Wakoli. They make Damascus steel knives and I thought they were also…. pretty damn good looking! While I’d heard of Damascus steel knives before, I really didn’t know much about em. Apparently it’s a harder steel and able to maintain a sharp edge longer than others…..perfect! Review after review talked about how sharp these were, and almost every review was praising the quality, especially for the price. A few of the reviewers were professional chefs and said they were among the best they’ve ever used. I was sold! After selling my Wusthof knives on Craigslist, I picked up a 6 piece set of their knives along with 4 of their matching steak knives. After using them for about 5 months now, here’s my thoughts……

    When I first saw them I really liked the look of em’, these were the best looking knives I’ve ever owned….IMO. I was also impressed with the heft of the handles and how they felt in my hands. I could feel the quality of these things just holding them. I also liked the look of the blades themselves, courtesy of being Damascus steel. According to the mfgr’s website they’re made of 67 layers of Damascus steel. Any decent brand of knives are gonna be sharp when you first use them and these were too, incredibly sharp! My first test was the ol tomatoe test….cut right through them easier than I thought they would. Holding a piece of paper in one hand and the chefs knife in the other, sliced right through with ease. Anyway, I’ve used these knives for almost 5 months now, averaging 2-4 times per week. I use an OXO plastic cutting board the majority of the time and occasionally a wood cutting board. I can honestly say these knives seem to be just as sharp as when I first got them….and I haven’t even used the hone one time yet. The knives I got were…..chef’s knife, a Santoku knife, a carving knife, bread knife, a small Santoku and a paring knife [they call it an office knife…🤷‍♂️] I’m no expert on knives, just the opposite, but these are the best knives I’ve ever owned, they’re super sharp and hold their edge for a long time. For around $300. for all six knives, I consider them a bargain for this kind of quality. The 4 matching steak knives were about $139. Anyway, if you’re in the market for some really good knives, give em a look.

        Those are some pretty knives. I love the look of Damascus. I have one extremely sharp set that I got off of KickStarter a few years ago but I don't use them much. I usually take them with me when traveling so they stay in my leather knife roll.

        My daily driver is a Bare Knives Santoku (also a KickStarter purchase, I bought the whole set) that really feels good in my hand and, I think, is a beautiful knife. I have not had to sharpen this knife yet after 3 years of ownership, I just hone it occasionally with the metal honing rod followed by my fine ceramic diamond honing rod.

          Yeah I don’t have the patience to use a whet stone or any of the manual sharpening systems. Get yourself one of these. A bit pricey but mine’s at least 10 years old, so it’ll last a long time. Eventually you’ll need to sharpen those knives and this is super easy, fast and puts an incredibly sharp edge on knives. I use it all the time bc I like wielding a razor blade in the kitchen.

          Panhead John , your in danger of bumping up your Master Enabler status to Master Influencer status. Those knives do look tempting. Who wouldn't want knives that stay sharp all the time, feel great in the hand, and look that good?

          My husband gives me the side eye whenever I drop a new knife in the knife drawer. Same with mugs and shoes. I think he has special brain radar set for those three items.

          Extremely beautiful set of knives, PJ. My knife sharpening woes are over since buying the Hone.
          Kim uses a knife the way I would use an axe.(Not quite, but I can hear the blade slamming down on that cheapo plastic cutting "board".) I have tried to suggest slicing as opposed to chopping. I would be terrified with something that sharp in our kitchen.
          I do not want to be the only cook in the house so I muffle my opinion.
          She comes from a family of butchers but knife skills are not inherited.

            Alan Brice I still have a small divot in my Corian countertop from a knife cleaver and a spatchcocking attempt with a Thanksgiving turkey many years ago.

            I keep thinking to have it repaired, but prefer to leave it as a good reminder about my momentary lack of knife wielding judgment.

              Those really are some good looking knives. One of these days I need to splurge on a good santoku. (Chef's knives feel weird to me as I've been using a santoku for 25+ years....I was....uh....uncomfortably into Iron Chef in my 20s.)

              One thing you didn't mention is how well they hold up in the dishwasher. (What?)

                Just remember to put the Carbon Steel on the top rack to hold those knives in place and keep 'em from moving

                Pro Tip: Always move your wood handle knives to the lower rack when the drying cycle starts. Being closer to the heating element will dry them out faster. 🥸

              What did you do with your old knives? I seem to remember they were more expensive than the new ones.

                Yeah, they were more expensive. Sold em on Craigslist. I found out it’s hard to recoup a decent amount of $ on used knives….🙄
