These videos are very helpful, and a great step by step instructional guide. I will definitely be going back to these as I learn to use the Hone system.
Finally broke down and pulled the trigger on this.

Don't be surprised if the shipment is late - it is coming from Canada. Not necessarily tariff related, as I had 2 orders from them that took 3-4 days "extra" and that was before all the tariff stuff.
I unboxed my Hone for my Vitrolnox curved boning knife.
I’m incredibly frustrated. I am struggling to have the roller contact the whole blade. I’m missing the tip unless I push it out with my fingers, the changed the angle. I cannot put the knife down against the counter because the hone misses parts of the blade and rubs the blade holder.
I’m considering giving up and going back to my old plastic sharpener with the grove and grinders in the middle.
Gonna do a search to see if others have had this problem.

Cooks Illustrated did a review of sharpeners recently. They didn't review Hone, but they had that same issue with other round rolling sharpeners like it.
Update,
so that little curved bade boner is a PIA to sharpen with the Hone
The good news is, all my others were a piece of cake.
They’re the sharpest they’ve been in years.
I found that for knives that were not damaged or really dull, the #2, 2000, ceramic, strop brings them to razor sharp.
Did all my knives but my cleaver. I think I need a plan B for that one.

If you have Wusthof knives, don’t listen to me about the angle of 17*. That’s what I THOUGHT they were. I’m going to call Wusthof Monday and verify the angle of my knives.
Andrrr I just called Wusthof and the lady said their knives are to be sharpened at 14.5* and……that 15* is perfectly fine for such a small difference. The Asian style knives are sharpened at a 10* angle. She said this applies to any of their knives that are LESS THAN “about 20 years old”. I’m glad to hear that.

Rubs:
Usually make my own riff’s on Memphis Dust and BBBR. Also use Meathead’s commercial rubs and occasionally try something new. I like a couple from Tuffy Stone and Kinder’s. After several surgeries, I’m very sensitive to “spicy” stuff, so I need to be careful about heat levels.
Y’all are breaking me down. I was already in the “I want one” camp, but re-reading this thread is rapidly moving me into the “I need one/will be buying one” camp. Now to wait for a sale of some kind…… patience RickyBobby, patience……..
Ok…… my patience has run out. Lol. I tried to wait for a sale or something, but could wait no longer. I ordered the Hone + extender + angle mate on July 22. Hoping that it lives up to the hype, though based on the experience of several Pit Members, I have high expectations for my cheap-o knives!!!!!
