    Calling all Hone Knife Sharpener…

    Calling all Hone Knife Sharpener owners. Would you share your experience? It will sharpen any knife? It only sharpens quality knives? It is easy or difficult to use? How long do the sharpening discs last? Have you purchased any of the coarser or finer discs accessories? Is it worth the price? Please share any observations you have. Thanks!

      I just got mine and am playing around with it. It definitely sharpens, takes a bit to get the feel. One issue would be a long flexible knife like a brisket knife. There is too kuch play in the end section to get it to sharpen. I see they sell an additional magnet to stiffen the blade. The jury is still out on this, I need to use it a bit more.

      Mine gets delivered Monday. I’d do order the extra ceramic honing disc. Long knives are tough for most sharpeners, even my WorkSharp E2. TBC….

        For anyone that has one of these, or is ordering one, here’s a great instructional video on how to use it. He goes into a lot of detail, including how to look for a knife edge burr…learned something new today. It’s about 20 minutes long so plan accordingly. At the end he does say it’s probably the best sharpener of its type for the money. I’m getting ready to order one now, and I’m going to also get the ceramic honing disc like GolfGeezer did.

Go to their website and order it, not only is it $6.00 cheaper than Amazon but they give you the Ceramic disc [$35.00 on Amazon] FREE with your order. The site offers free shipping AND they didn’t charge me any tax! I actually ordered on Amazon first, and cancelled my order with them after seeing about the free disc.           I got no ceramic disc. $105.00 #1 disc =400. n #2 disc. =1000. Roller n magnetic base. Instructed to go online @honesharp.com for user instructions.

            Who’d you order it from? If from their website, maybe the free ceramic disc is a new and/or temporary offer. 🤷‍♂️ If you did order from the Hone website, maybe email them and nicely ask if you can take advantage of the free disc offer since you just recently ordered it.

            Kim says I got it through Amazon. She says I can return it and re order thru Hone. That is not something I would care to do. If I screwed up I will pay the extra $35 for a ceramic disc and that is that.
            I have no idea how long these disc will stand up, guess I will have to find out.

          I've really been enjoying mine. I did a couple of sharpen/hone cycles over a few days and now just grab it to do a hone cycle before I use a knife.

          I do about fifteen full-passes (forward + backwards motion) on each side.

          Then only two drawbacks are this thing does produce a lot of knife "dust," more than any other sharpener I've had. Also, if you have a very thin knife, you have to be careful on the pressure you use so the blade doesn't flex.

          It certainly gets my knives sharper than the Dexter-Russell sharpener I had been using!

            Good to hear! It seems to me that once all your knives are sharp, just an occasional run with the 1,000 grit pad and the ceramic pad, should keep them sharp for a good while.

            Do sharpening degrees matter? I have wustoff knives that are 14° and Shun that is 18°. Curious if the 15° and 20° makes any difference or detriment?

              I have Wusthoffs too and saw that they are 14*. I was wondering the same thing. I’m just going to use the 15* angle.

              the angle is important to how long it will hold an edge. American knives are typically made to 20 degrees because the steel is a bit softer. it won't hold an edge as well at 15, degrees. Asian knives take the 15 degrees because the metal is harder. at 20 degrees, they might be brittle sand chip more.

              LA Pork Butt I’d recommend watching the video from Ukulele Jay that I posted above….👆👆 He intentionally dulled a knife pretty bad and showed how he sharpened it back to factory sharpness. Member testimonials are good too!

              One point that was not in the video, you shouldn’t sharpen knives near your food prep area.
              I bust out my Hone kit at least once a month to sharpen my most used knives. Not much to it. Gets knives sharp quickly.

              #StrikeBBQ You say one should not sharpen in food preparation areas. Can you please expand that thought?

              I ask because I have a small home with a small kitchen. The only counter space in my kitchen is food preparation area.

              I suppose a plan B could be to store the Hone & accessories in the garage with my tools a d sharpen at my workbench.

              Thoughts on this?

            Panhead John I watched the video and planned to do essentially what he did, but I won’t have the 2 additional discs he uses. I thought I would see how it goes with the two discs that come with it and the ceramic before I invest in additional discs. Hopefully our Honers arrive about the same time and we can compare notes.

              I just sharpened my carving knife for the prime rib tonight. I only have the 1 and 2 standard discs. It's razor sharp, no question about it.

              Same here....I have just the original two discs. I might pick up the others, but so far, after a week of nearly daily use, I don't immediately see a need for them.

            Mine should be delivered today. As a side note, I was looking for where I hid parts for my Worksharp E5 (now called pro I think) - I say "hid" because I can't find the parts. Just to be sure I actually had actually purchased those parts, I checked my account at Worksharp. Guess what they have: their own version of a rolling sharpener.

              I’d never heard of these type of sharpeners until Michael in Texas posted his that he got as a gift in the Secret Santa thread. Now I’m seeing that there’s several of them out there. I’m wondering if these are a fairly new thing or I just had my head in the sand? 🧐

              PJ, there is one that has been out there for a while named the Tumbler.. It got mixed reviews. So I have aware of this type, but the Hone looked like it had a significantly improved approach, with strong magnets. We will see, but based on what other Pit Masters have posted, looks like a solid purchase.
