Steak knives: love 'em or toss 'em?

    We have a set of Henkles. Nothing fancy. Use them all the time. Also use them a dishwasher safe utility knives.

      I don't want every steak so tender I can easily cut it with a fork. Even if is it, I want to cut it with a good knife. Cutting a great steak with good steak knife is part of the experience.

      We recently at at East Main Kitchen in Baltic, OH for our 25th anniversary. The American Wagyu Ribeye was fork tender. But I cut it with the steak knife. Nice, clean cuts and clean bites. Of course, the nice Dalstrong that the chef sent as the steak knife was a nice touch. BTW, if you are within driving distance, that place is fantastic. All steaks are cooked by a master on one of two Big Green Eggs.

        I graduated from high school in 1966. The cheapskate neighbors (regifted?) me a set of 6 steak knives as a graduation present and I still have them and still use them even though we probably don't need them.
        My parents grumbled more than I did about the present, and when that neighbors' daughter graduated from high school two years later, I suggested that my folks give her the knives as a graduation present but they wanted to remain friends with the neighbors so it didn't happen.

          I hate serrated steak knives, which of course is what we have. Wife uses those, I use a little pairing knife I always keep sharp.

              We have one set of steak knives and use them to cut steak or other types of beef. Not real expensive set but good knives.

                We got a nice set as a wedding gift. They are nice to use for the special occasion or the special protein. Can't put them in the dishwasher, so definitely not an everyday use item.

                Not sure I would spend the money on them myself, but I do enjoy using them.

                  rickgregory I am pretty sure these are not actually "made in France" knives. They are nice, but not the "real thing." Would love to use a nice set of the French ones though.

                  The Laguiole trademark is, I think, an indication that they are, though. They look great regardless.

                  I also have a set of these, inherited from my father. Bring them out on special occasions. The bee emblem on them represents Napoleon.

                All I can say is these mo fo’s better be good! Bought 4 of em today with my set.
                It’ll probably be a year before I can afford to use em on a steak though.

                  I must say that it's a little uncomfortable to use a "nice" knife against a hard ceramic plate. Luckily the PJ line of dinner plates has already taken this into account

                  Still, were you in the recent sharpener thread? Edit: I see you were and you're in good shape with it.

                      I got an 8-pack of AmazonBasics steak knives a couple of years ago, and for the price paid ($20ish) they are amazingly good and sharp, and have a nice feel and weight to them. We use them regularly. When they get dull, I'll get another set or sharpen them.



                      I wouldn't want anything nicer being ruined cutting on hard glass or ceramic plates.

                        Attjack yes in fact I do. For $20 its like $2.50 per knife for the set of 8. Why worry about it?

                        I do not put my Victorinox slicer, my Dexter boning knife or Rapala fillet knife in the dishwasher, but those are the only "good" knives I have. The multi colored set of AmazonBasics kitchen knives also go in the washer.

                        In addition to steak knives, I have a collection of old knives I consider cheese knives that I will put in the dishwasher too. Everything else is hand washed and set on the soft matt below the dish drying rack until they are dry.

                      7" Old Hickory is my favorite at home...even bought a sheath for it. My wife won't let me make a set by buying a few more.
