I must confess: My instant Pot has replaced my smoker for Pulled Pork

    It took me a LOOOONG time to come around to admitting that my wife beats my smoked pulled pork hands down with her pressure cooker. 90 minutes verses 8 or 89 hours and the results voted on numerous times--she keeps winning. She does cheat a little bit though. After she pulls it she hits it with the PolyScience Smoke Gun. It is pretty nice.

      What do you think about that smoke gun? Seems kind of an expensive toy, but it also sounds pretty effective.

    It works very well for us. Kind of surprisingly well for what it is and what it does. It will definitely put some flavor down.

      I like my InstantPot. It's a handy tool that has replaced the old electric pressure cooker and my crock pot on the kitchen counter. I still have the crock pot, but its only duty now is to make King Ranch casserole and to transport chili from my kitchen to a chili cook-off and warm it up there.

      I've used my instantpot several times since I got it a couple months ago, and I love the ability to cook a one-pot meal in 35 minutes. I don't get home from work until after 7 and my wife goes to bed before 10 and won't eat after 9:00, so my window for cooking meals in the evenings is very small.

        Our oven needs a new controller board, and it’s ⛈💧⚡️⛈ this evening so I didn’t feel like grilling. Luckily I had a) a pork butt, b) an InstaPot, c) Abom ‘s recipe d) a wife willing to make dinner. It was very good, had a nice carnitas flavor I remember from my SoCal days. Thanks for the recipe!

        I believe we need to start a smoker revival course. Take em all out in a wood smoked meat cabin and stick em inside and lock the door for a week.
        I do understand where you are coming from
        sometimes now days with all the new technology it makes ones person life easier with all the running around we do. When we get home we are exhausted. And just wanna eat something easy. (Use a microwave,electric cooker etc...). It makes food satisfying and quick.
        I just think that people adapt to an easier solution then back in the day when we barely knew what an ice box was.
        But, as my saying goes....wwjwd?

        You know what, revisiting this topic: there's no reason you couldn't sear a pork butt, then put it over smoke for an hour, then IP it for an hour.

        No reason. None. Best of both worlds.

        I pressure canned MY carnitas recipe last weekend, and it was FRICKEN GOOD! I got a three for one: a fast cook - 75 minutes in pint jars, first time pressure cooking/canning, and really good carnitas left overs that do not require refrigeration/freezing. I am pretty stoked.

          Yeah definitely it doesn't have to be one or the other...I have a gas grill, charcoal grill (charcoal def. get used more but the gas is sometimes handy even just as a "keep warm" box), sous vide machine, and an Instant Pot, and use them all. IP is amazing for hard or soft boiled eggs in absolutely no time, or for "homemade" (so to speak) mac and cheese very quickly as well. Not to mention it'll cook a whole 5 lb chicken in like a half an hour. (Obviously a nice crispy-skinned, slow cooked chicken is better for eating right away, but if for example you wanted to make a whole mess of chicken salad or something of this nature, the IP can't be beat.) Not to mention it's a fantastic rice cooker, and does an amazing (much less labor intensive!) job on risotto, so you can definitely combine your tools to make amazing meals. I find one really useful thing about both sous vide and the Instant Pot is that once cooking is done, you can hold them in there for a while (quite a long while in the case of sous vide) until everything is done, so everything comes out at once, nice and hot. Great for those of us who sometimes get distracted chit chatting with whoever's over or watching the game while we cook :P

            How to get smoke flavor in instant pot? I wonder if about an initial hour on the smoker and then finish in the instant pot would work? And what about bark? I kinda like the contrast between a little chewy bark and the super tender inside of a fully smoked butt. Nothing wrong with full instant pot PP if time and convenience are important.

              One thing you are not going to get from the IP is bark. Frying up the carnitas after they are cooked gets you some crispyness, but it's not bark.
