I'm too lazy, usually just keep channel 1 as the ambient probe and channel 2 as the internal. Rarely use 3rd channel on my fireboard

Yes. You can plug up to 6 probes into the base unit, and each one is assigned to a channel based on where you plugged it in. So a probe plugged into port one of the base unit becomes channel 1 and so on.

Just a note that it gets a bit more complex with the new wireless Pulse probes. You can, theoretically, connect 32 Pulse probes to 1 FB base unit. You can name each one as well, which can get a bit fun since there is no physical port involved - you gotta know which meat or where you placed it, particularly if using more than a couple of them. So, naming them really helps!

And I run 2 Fireboards, so as many as 12 channels sometimes. On big cooks, or when testing out a new cooker I've built (or bought, lol). Temp mapping under different conditions is helpful to me.
