        Sous vide is slowly warming up, in general. ;-)

        I have perhaps the ultimate MCS purchase planned. A house in the suburbs, and a move from the condo. I've been a bit scarce in these parts because, as condo board president, the basement owner's nightmare has been occupying so much mental space, I have had no room for anything else. It's been a grim period of cooking, with a few spotlights, but when I'm stressed, I don't enjoy the food as much. Or anything much.

        It's odd that I call it her nightmare, because, in reality, she IS the nightmare. A finger pointing projector of negativity, with an entitlement streak and victimization belief that are a mile wide and ten deep. The money I will be sinking into her unit is bitter, because I honestly have no positive feeling left for this woman. And so, wife and I are agreed to move out, and we can own a single family house in a nearby suburb, which means a yard.

        Which means an eventual return to charcoal. Maybe. The question is whether I will go for the versatility of the Kamado, or the brilliance of the Kettle. But that is a question for another day... first the sale of the condo, the purchase of the house and the move from one to the other.

        But seriously, buying a house to have more BBQ equipment and a larger space for my wife's growing cacti collection... if that isn't MCS, I dunno what is.

          Happy house hunting! Some people look for bedrooms for kids when they look at houses--you get to look for outdoor space for future BBQ toys. It's fun either way. I hope you find the perfect house and yard for you and your wife to enjoy for many years to come.

          Too bad the condo board president job has become so stressful. People don't realize what a burden a voluntary position like that can be. Plus dealing with The Great Disgruntled is never pleasant. I hope you can get away from that soon!

          Basement owner has a great sympathy story, and has incurred maybe $50K+ of water damage since moving in. Plumbing back up, foundation seep, and then a full blown 4" rain dump that backed up into her unit. She's a single mom with MS.

          She's also under the impression that the bylaws state she only owns the air in her unit. And she hired her brother to do work on behalf of the HOA. It takes 30 pages to explain the full history, but suffice to say, she has earned my feelings.

        In Oct. this year my Lone Star Grill Mini was delivered now I need the Fire Board fan to round out my options. Don't need much of anything else now.

          It is my go to pit for everything but steaks which go on my Weber smoky Joe. It is larger than what I need unless a hurricane takes out the power for a couple of weeks then I can cook whole meals in there. would I buy it again, absolutely and would bite the bullet and add a few more options, like probe ports and a second air vent set up for the fan and most of all an outside shelf. I would like the off road kit since to move it means dragging it across uneven ground instead of concrete.

        So as I sit here, I am rethinking 2020 wants. Not sure if new. but, putting more attention them at least. I am getting more serious about a Searzall, a 26 weber kettle.... from there, I want to work with an architect some sort of wood fired pizza oven, with some sort of side santa maria grill and a hard top stick built on site gazebo... I think the designing phase is 2020, the building phase is likely 5 years..

          RE: Searzall, I have one, used it twice, maybe never again unless we make creme brûlée's . RE: outdoor cooking area, it is the only disappointment I have regarding our new home. Not enough space, and my wife is always letting me know how my meat cooking gear is unsightly & cluttering up her kitchen garden!

        This is going to sound crazy but I now have everything I want. Nice pellet grill (Yoder 640), 26" weber, big gasser and side burners built in to two large stone islands with granite tops...sink, fridge, Oklahoma Joe UDS, big blackstone griddle, all under a nice new extension to the house. All sorts of temp gauges, searzall, sous vide machines, loads of knives and toys. Deep fryer. Seriously, I am good. I am spending all my money on meat.

          I am pretty satisfied, I am likely just trying to get to where you are with similar wants. Just started last year, ad much further then I could even imagine.

        I have the LSG large insulated cabinet smoker coming (mid April I hope). Getting bids on getting a solid cover to replace the slats that I have over my patio, for better protection. I just got a 18"x30" SS prep table on wheels so I can move stuff around easier.

        Don't think I'll get anything else major this year. Break in and learn that new smoker and use everything as much as I can.

        Just when I think I'm done......

          I don't know how I missed this thread, but at the top of my list is a Cajun Fryer. However, my wife thinks fried foods are too unhealthy, so it may just stay there...

            Man, what is it about wives and fried foods?! I take my lipitor, work out at the gym, and don't smoke. Can't I enjoy a little fried chicken, onion rings, fries?

          MCS 2020 Goal Almost Achieved.
          We are under contingent contract for our new home... a big sale point for me, is the back yard, which is 100% pavers and planting beds. The Grilla and the Genesis will have a nice space, and room for something that burns charcoal or wood.

          Very excited, now just have to find a buyer for my condo. Can you believe some folks liked it except they didn't think the kitchen would be up to their needs?

            Potkettleblack I grew up in the old section of Westchester, between the Eisenhower and Roosevelt. There was great Bohemian Duck at 5 corners in Cicero. I drove by there a couple of years ago (flew to Midway) and those restaurants are all long gone.

          Pretty simple here a Weber kettle, size optional for searing.
          Missed out on a 18" with cover and chimney for $50 yesterday another buyer beat me to it....ratz, ratz, ratz….the hunt continues.
