    PitCast Episode 120 - "The WINGS Round Table" - August 16, 2018

In this episode the panel covers EVERYTHING that has to do with preparing, cooking and eating wings!! There is even a mention to turkey wings at the end. Thanks to Steve B , HouseHomey and Spinaker for making the time to do this round table. A LOT of great information was shared...so if your wing game is not on par....this will help!!

Great episode. I laughed and I learned. Thanks guys for sharing. I cooked wings for the first time ever about 6 months ago - on the kettle with vortex. It was such a hit that's it's now a regular Sunday night routine. I learned a lot of ways to improve my game now.

HouseHomey "Well first of all, I can FRY them..." HELL YEAH, lol. Ifin' its meat, and it ain't smoked or grilled, it better be FRIED. Gonna make some fried chicken tonight in your honor.

Very good, but there are three approaches - now how to synthesize?

I hate the way I sound. There was so much more to cover.

It's always weird, hearin a recordin of yer own voice; makes ya think "Do I really sound like that???"

Ahh, Hail, Brother Steve B !!!
Try recordin vocals in a studio, fer an album, vs what ya hear through yer own ears, an make it sound good enough to put yer name on...
Yall sounded great to me, an I don't grade easy, like!

That is one of those episodes that needs a 2 or 3 parter. It was over too fast. HouseHomey I see that you are putting that OCD to work on your wings and other cooks and the results show it. I need to put mine to work on my cooks. Been more worried to get things done at a certain time instead of taking the time to do it right. I see that I need more wings in my life. We have our own homemade bbq sauce but I recently found Frank's Hot Sauce and it is terrific. Do you guys make a blue cheese dipping sauce? I don't fry mine mostly because we don't have a fryer and no side burner on my Blaze gasser. Thinking about getting that burner Spinaker was talking about.

Just another good episode. Thanks, Greg BBQCentralShow . (Gonna have to listen to this again and write down the processes of each.)

Whenever blue cheese is an option the answer is yes.

A ranch is where you raise the critters we smoke.

After listening to this. I had to make some.

Dry brine+MMD (limited sugar to half, too much tends to burn on finish) , smoke for an hour and deep fry in wok to finish.

The best thing about food experiments is eating them.
