It was a blast talking to BBQCentralShow and a privilege to share my trial-and-error experience. The one thing I should say before anyone asks - NO, I don't have any pictures. One of the teenage boys made a big deal of volunteering to be the official photographer. Then he played video games the whole time and took exactly zero pictures. I'll get pictures next time!

Really nice to get to know you radshop , at least a voice to a name !!! Another good pitcast Greg BBQCentralShow , enjoy all of these. The dry aging, Umai bag discussion was spot on. BTW the outer crust is known as the pellicle.
