Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. Chicago, great city! I can vouch for the great tailgating. Never ate or drank so much in my life. And that is saying a lot.
I got my start on a E smoker as well. And I also had no idea what I was doing until I discovered AR. I gave the smoker away but I must say, it was the start of a great thing.
So do you haul the Summit back and fourth to the camp site? Or do you move the kettles back and fourth?
It is amazing what happens when you go from electric and live fire, isn't it?
If you don't do fish, try Meathead's Fancy Salmon recipe. It is great stuff, especially if you are on the fence about seafoods.
Texas BBQ is what they say it is. My favorite BBQ in the world. IMHO.

Spinaker the Summit lives at the site as hauling it would quickly wear thin...I also took it off it's wheels and had feet custom made for it which makes moving it less palatable even still. It does the lion-share of the duty up there but I keep a Q 200 series for an assist. The cooks there have become a bit of a thing...as we don't go hungry and my ribs are pretty popular. Ive had to haul the pit barrel up there towards the end of last year to have enough capacity for everyone....probably gonna get the junior model to stay up there this season.
The people that have gotten into the hobby "because" of their conversations with me (which is really rewarding) have tended to go the electric route also. I often say that the E smoker was a sort of necessary phase for me to really get my hands around things. But you're right - the jump to the charcoal side this last year has really added depth to the flavor of the cooks.
