Thank you for taking the time to let us get to know you. Sorry I missed this when it was first posted.
I have always wanted to fly in a Chinook. I always though that would be a cool experience.
I would love to find one of those "pig pickin" parties, we don't have many of those up here in the north country. That is one of those classic BBQ settings that would be a great to stumble upon.
You are second person that I have heard say that half of culinary school is learning how to run the business side of a restaurant. That is a very interesting perspective. I never would have thought that they would even taken the time to educate people on the business side of things.
You should make that short rib recipe sometime and let us check it out! That would be interesting to try out. I am also intrigued by the middle-eastern spice blend.
I am also a huge fan of pork belly, but I think you take the cake on that one. I have never actually sat down just to eat pork belly. LOL. A little rich for my blood but I do love making it. Probably my favorite way to eat pork belly is with some of Meat Church's Deez Nutz, Honey-Pecan Rub. That pair with a little bit of cherry smoke and you have yourself your own personal slice of BBQ heaven, my friend.

Here in SoCal and on the coast we have/had tons of Sea Nights. Growing up around here they were flying low all the time. El Toro and Tustin Air Bases were still open then. phrogpilot73

Hi, my name is Darrell. I'm an OTR truck driver for over 25 years. During my off time I love doing backyard cooks. I have a 48" Lang Deluxe smoker, Rec-Tec pellet smoker,1 Weber Genesis 330, 1 Weber Performer (blue), 2 Weber kettles (1 black and 1 Copper), 1 26" Weber kettle, a WSM, 8 Maverick Redi Chek thermometers, a PartyQ, 2 SnS, Grill Grates, Cast Iron grates, 1 ThermoPop (orange) and 2 ThermoPens (pink and orange) and planning on adding more cooking accessories. Now I have an Anova sous vide, the Dragon blower and 2 Chef alarms from Thermoworks.
