I have to second the Alabama White Sauce thanks to Meathead. I can't eat chicken any other way and the store bought white I tried wasn't even close to as good.
As for the beer there are several styles of IPAs these days which makes BJCP judging a mess. I wont even do IPA categories but I will say that when I'm camping or smoking the Founders All Day IPA is an outstanding and low ABV beer. When eating the Fat Heads Headhunter IPA or Hop JuJu are solid choices as is Victory Prima Pils, or I'll go with a local Belgian white.

I love those Hibachi cooks! What a great BBQ/family memory.
I really need to get one of those Santa Maria grills. Have you cooked those Tri-Tips on that Santa Maria grill? I would love to do that some day, especially over oak, as you mentioned. I would love to get that finishing sauce you were talking about.
Trader Joe's is also the only place I can find Tri-Tip up here in Minnesota. I really wish my Costco would carry them. I would be cooking a lot more Tri-Tips!

A BBQ tour is a great time, but go to one a day. Otherwise you'll be full for daaaays! Thats what happened to me in Austin!
I'd stand in that line with you brother! We would probably have all the world's problems solved by the time we finally ordered!
I haven't done a SV'd Tri-Tip but I had one at Skip 's place and it was amazing. Alright I need to go out and get a Tri-tip at trader Joes.
I am using the AL white sauce this weekend. It is my father's favorite sauce that I make.

Thanks Danjohnston949! I have no musical talent, what-so-ever. Glad I wasn't asked to contribute in that fashion or the show would have gone under. HA. My uncle was a butcher and I remember him bringing cuts to family functions with the disclaimer "Nobody knows about this but..."
