When I got this thing built, I was originally thinking about 1 or 2 hooks on the up-rights that could hold a skewer.
So I ended up with this... I found a blacksmith on ETSY and he customized a 1/2 forged skewer with 2 meat dogs and the little rectangle piece on the keeps it stable and allows for 90 degree rotation. Plan to run hot spots on both ends of the cook area and I can adjust position of the skewer from center as needed.
That fire box is about 9 inches deep with the firebrick installed. If I need greater height, I can run hooks or chains from the bottom of the grate.
I have a pretty big cook on Saturday (10-12 folks for the 2nd Annual Bad Hat BBQ Fundraiser), and plan to grill veggies on Rosalita and then skewer a couple of pineapples to go along with the cheesecake for desert.
Delilah will be smokin' the Ribs, Pork Belly, Chuckies and Mac& Cheese.....Pics of the cook should happen on Sunday.
