Congrats, that thing is huge! Do you have a catering business or just throw giant parties?
I kind of fell into the catering side. My wife and I have a non-related retail store with daily classes that I was occasionally cooking for, when customers and friends started asking me to sell my food and favorite sauces/rubs/etc. One thing led to another and I have been cooking a few days a week and turned a corner of the store into a section with all of the above, gradually increasing my offerings. I pay $100 a month for a commercial kitchen space for licensing requirements so that I’m legal. I don’t have hot foods ready for consumption on the premises, just refrigerated dishes by the lb to take home. My selection of foods has been limited as I work out the best means of getting items on the table in a fashion that I’m happy with. This will give me the ability to grow even more. I also have wholesale accounts with several purveyors to provide a varied assortment of related products.

What a great looking cooker with SOOO much space. Look forward to seeing and hearing how it performs for you. I know I like my LSG 20x36 pellet cooker.
