    Best Vessel For Curing Ham (or other large hunks of meat)

    I'm going to do a ham for New Years and the pic in the recipe on AR for ham displays a 22 qt Lexan container like this https://www.amazon.com/Rubbermaid-Co...8-1-fkmr2&th=1

    It's really expensive. Anyone know of a more affordable option or do we just bite the bullet and get this thing we will rarely use?

    Get a five or seven gallon food grade plastic bucket from a homebrew supplier. Or any place that sells food grade buckets. Heck, you might even try the Walmart bakery, ours used to give them away, now they charge a small amount.

      Good thinking. And when the ham is finished, perhaps we brew beer. Or maybe forget the ham and just brew some beer!

    For that matter, anyone have a good source for an uncured ham? Costco?

      Can't help you there, I raise my own. I have two whole hindquarters in the freezer, but FLA and WA are about as far apart as you can get in the continental US. Look for 'leg roast'.

    I use a 2.5 gallon ("JUMBO") zipper bag. I place it into a deep half-size stainless steel hotel pan to keep the zipper end of the bag at the top. Every day or two I slosh it around to mix the contents. The pan has other uses, such as for oven roasting or braising meat.

    BTW, expel all the air from the bag before closing the zipper.

    If you have a restaurant supply in your area, try them. They may have what you need at a good price. But be forewarned - going into a restaurant supply could be dangerous to your wallet.

    I have a pail called "The Briner". Comes in a couple of sizes and has a cool plate to keep the meat submerged. In Canada it is sold by Dickson Barbeque. I think the company has a website for US customers.

      I was looking for something similar a few years ago. The best thing I ran across were used icing buckets from donut shops. They go through a bunch of them and (a few years ago) I was able to get them for $1/each. Just ask and see what they say.
