Picked up the rib hanger at the St. Louis bbq store, went on vacation and forgot about it. Stumbled upon it this week and cooked ribs in it for the first time.

Yes, it is a perfect fit. I was impressed with the finished product. When it’s time to wrap I simply replaced the rib hanger with a regular grate. (I hung the rib tips as well)
Directly over fire with a guru. It ran about 10 degrees over target temp, probably the fat dripping on the fire, but I’m sure that’s what gave it this awesome flavor.

If not cooking outdoors, I am cooking on the stovetop with my 14" carbon steel wok, 12" CI skillet, or in the oven with my two Lodge CI pizza pans, or two dutch ovens. I've also got a nifty Lodge carbon steel grill pan that rocks for veggies outdoors.
Posts like this are what have swung my MCS away from pellet cookers and the PBC, to a WSM 22 at some future time - the versatility to control temps the way I am used to with the WSM, or hang like on a PBC. And my Party Q should work quite well on it as well. The Party Q is what really convinced me to stay with charcoal, and not fool with pellet cookers, after I got a taste of cooking overnight without worrying with fire management.
Temp controllers make the WSM the ultimate cooking machine. The taste of a stick burner, with the convenience of charcoal, and the versatility of a PBC.
Update: Today I acquired the gateway drum smoker diffuser plate for use with my wsm. Taking her for a spin tomorrow, hopefully I leave with a check and a trophy.

I’ll never go back. It was a tad tricky getting it in the cooker from the top. So I went in through the bottoms. Set it right on the fire ring. Seems to really even out the cook.
