I didn't take any photos because I thought this up on the fly.
1 inch thick ribeyes.
Start a near-full chimney, let it ash over, and fill the S&S. You want those coals full, hot, and up close to the grate.
Position the D&G on the grate and over the coals and let it heat up.
Toss the steaks on the D&G and let each surface brown, maybe a minute each side.
Move the D&G out of the way to the cool side by rotating it, and move the steaks over the coals to finish.
Voila! You get the full browning of a griddle, and the over-the-coals flavor! Remember, 1†thick ribeyes cook fast. Keep your Thermapen handy and check every 30 seconds. 125 is med rare, 135 will get you medium. 145 may god have mercy on your soul.
