I don't know how cooking bacon, eggs, pancakes would do on them since there are no edges or grease catcher. The grease all goes into the flame and ultimately into the catch tray under the firebox. So for breakfast cooking, I could probably use my DnG from my SnS trifecta set or the CI griddle. But I don't do breakfast cooking outside on my grill. I have a new toy for that (The Camp Chef Somerset IV Outdoor Gas Range).
I clean my Grill Grate Griddles initially (while still hot on the grill) with a squirt of water and a good scrape of the spatula. Then when cooled, I bring them inside and clean them with soap, water, and a 3M scrubber pad. Any residual cooked on gunk is first removed with a single sided razor blade before the soapy water/scrubber treatment.
