First time rib rack question......

    First time rib rack question......

    Have 2 slabs of St. Louis ribs going on the Weber in a few hours. I'm going to try using the Weber Rib Rack for the first time to save space. If it works well I will be able to feed more friends, neighbors and relatives.

    I'm wondering if I should cut the slabs in half and then put them in the rack? This kind of defeats the purpose as the rack is made to hold 5 slabs. And I want a good separation between the slabs

    Anyone using this rack? Doing full slabs or halves?

    I rarely use one, but I always leave them whole in the rack. You can get more on.

      My beef with the rib racks I've used is the lack of width to fit thicker slabs and the lack of length so the ends don't want to fold over on each other. Can't remember the last time I used one.

        I agree. For today's cook I had to bend the rack in half and through 2 slots. Kind of defeats the purpose. Ribs have another 3 hours or so to go. We'll see how this works.

      I always liked to leave my racks whole. I like to use the bend test for doneness, and I found half racks tend not to bend, even when they are done.

        Ribs are more than half done. Now that the snake has burnt down some I have more room on the food grate. So I cut the rib in half and removed them from the rib rack and put them on the food grate. About 2 hours to go.

            Just an update. If one trims the spares to a 7-8 bone St. Louis cut and uses 2 rib racks, it works great for smoking multiple racks of spares.
