So, I have a friend who is a pretty damn good chef, but with some hard times, he is selling some, thankfully not all. I am not even all sure what is available, and what he is keeping. But, I reached out and asked him for a tour of his equipment, to get a better understanding of what equipment and why, and who knows, I may even be able to afford to buy some of it with his guidance. So here is the question, If you were walking into a professional kitchen and catering equipment sale. Knowing what you know about bbq and outdoor cooking, what 1 or 2 things would you buy for sure if you saw it. Could be based off what you currently own and think it was perfect. I expect it to be a lot of pans, of various types, trays, cambro systems. etc.. (I tend to be most interested in prep pans, steamers, storage, ways to keep stuff iced, heated.. ) But, guessing there will be gems in there that I do not even know they are.

I don't have a stand mixer or a meat grinder, reasonably priced commercial fridge I like hotel pans for prep and storage and serving(less for the landfill)
