    Larding needle

    Have any of you used a larding needle? I've been reading about their use on lean cuts. Cooks Illustrated had a short article where they used one on an eye of round roast. They liked how it turned out.

    Many years ago we had one in our market for customers who wanted clear suet or herbs run through a roast...It worked okay, but became very infrequently used..

    I think if you go to a liposuction clinic, you could get all the larding needles you need. You might need to clean them a little. 😏

          I just read about them a few days ago. It's something I'm going to try. If it doesn't work that well I haven't hurt anything expensive. I think I can make a better one than those I've seen online.

        I have never used it before. However, I have tried injecting fat into a flat before, I really did not notice any difference at all. I think you are better off buying Prime, wrapping and going from there. But that is just my experience, others may have had better results.

            Hahaha! There's a mental picture! No really what I'm thinking is this. I have an almost unlimited supply of feral hogs. By the time I get a loin to the temp I'm comfortable eating it it's on the dry side.

          My mother had a larding needle, the open trough type. Years ago I tried it, but it was hard to get the lardons in. I've seen another type, with an alligator clip at one end that you push entirely through the roast and pull out the other side -- that looks like it wastes a bit of the lardon but I've never used that type so I can't be sure.
