So, I know end grain cutting boards are the bees knees when it comes to being a good surface to cut on for your knives. Is a slab of wood just as good? Like, if you cut a 1†thick section horizontally off a hardwood tree trunk?

That would work, but it will more than likely develop a radial split or two as it dries. And it needs to be dry before you oil it.

When I was sailing on merchant ships we always had several slabs for cutting gaskets. They are great for cutting detailed shapes. However we had to have several because as they continued to dry they would always split and become useless for our purposes. That may be why you don’t see a lot of older ones around.

Google live edge cutting boards and you will find plenty slabs of hard wood that have been kiln dried then treated with food safe oils and sealed. They also leave the live edge or the bark on for a unique rustic look. Many are made by wood craftsmen and will make you any size or shape you want. I've thought of having a nice large one made to slice brisket on for a nice presentation. Etsy is a good source for these.
