Need help with a review if you have xperience

I am looking for gloves to protect against latent heat, more specifically steam. I would like to purchase them as a gift for my pastry chef. There's an issue when she's making caramel ice cream. The heat that comes from the large open pot is extraordinary. I found these on Amazon and I'm hoping some of you have experience with them. It is about 60 to 75 seconds of straight stirring . I don't know if steam heat is different when it comes to these types of glove.

I get that direct heat, radiant heat and convection heat are ok with the gloves. Not sure about the latent heat.

i would appreciate the help and education I know you all can provide. I am aware of the pit approved gloves on the right side of the screen however they say to avoid prolonged exposure.

    gracias

Since steam might be a problem. I suggest getting either knit gloves with a waterproof liner, or heat resistant rubber gloves.

Waterproof liner. I didn't think of that.

Firefighter gloves might do.... or gloves for someone who works with boilers. I had a pair when I was a railroad engineer on a steam engine and they were magic. They're made to resist direct, radiant, and steam heat.

Ove Gloves and others of their kind are good for everything but steam. Those will collect steam and burn your hands. I learned that the hard way a couple years ago.

Well said sir. My father in law started with the forestry and decades later retired as an arson investigator. Doh!!! I'm an idiot.

I don’t like any absorbent gloves around water/steam. They trap hot water against the skin. Leaned that the hard way draining pasta. Spilled the water, it soaked a couple of the glove fingers, and I had to set the pot down safely before I could yell and rip the glove off.

That said they are great for dry use.

I got the manlaw gloves in the review below. Since they are non absorbent and can be easily cleaned, I use them to handle hot food right off the cooker.

I dont know of they they would work for your application...

The trouble with any kind of knitted, cloth, or non-waterproof gloves is that water is a very good conductor of heat, so wet knitted or cloth gloves conduct the heat straight to your hand. Waterproof internal lining won't help. I've got a pair something like the link below. Never tried steaming them, but grabbing a brisket right out of an aluminum foil Texas crutch at ~200º is no problem.

OK, what Polarbear777 said, looks like he posted while I was typing.

pitmaker makes some rubber gloves that are phenominal. i have 2 pair. you loose some dexterity, but they sure do come in handy in a crawfish boil.

Knit gloves with a rubber glove over the top. That will work well with steam and latent heat. However, if the steam get the knit gloves wet they do the opposite. I would give it a try.

It all makes sense now. Give the FF gloves a try. They are really well insulated, leather outers which shouldn't conduct a lot of heat, and are gauntleted to protect the wrists. Machine washable, but for best results air dry. Lemmeknow if it works for you.

Back when I worked on a steam locomotive, our gloves were always leather.

I can't as I'm pouring the cream into the moulton lava which generated the latent heat. However..... I have used Palmolive for decades.

How about a longer stirring device to get the hands away from the steam all together?
