After reading some recent pastrami posts I now have an interest in purchasing a panini press. A quick search revealed dozens of styles and brands, too many for my limited attention span to sort through, so I appeal to my homies here for your recommendations. Thank you in advance.

I know this isn't exactly what you're after, but combined with a CI pan, it will get the job done, and is versatile. https://www.amazon.com/gp/product/B0...?ie=UTF8&psc=1

A Cuisinart Griddler. There's different ones to choose from but they all have removable flip plates so you have both ribbed and flat cooking surfaces, a grease catcher that actually works pretty well and the lid lays all the way back to double the griddle area if you want to use it like that.

I am with xaugievike on the Cuisinart recommendation. My mom got it for me a couple of years ago as a Christmas present. I use it at least once a week. I just made has from leftover BBQ'd beef ribs this mornings on it. It's great for paninis due to the swivel hinge.

Thank you, my friend. We're looking at the GR 8, what model do you have?
-
I con't know what model it is. It simply says Griddler by Cuisinart on top. I looked them up online for you and I can't tell what number it is. Since it is a couple of years old I'm sure that GR-8 is an upgrade over what I have. Mine looks like the GR-4N
