Takamura are nice knives. If you want to utterly geek on j-knives hit up http://www.kitchenknifeforums.com (no affiliation, just an addict).
A few things - learn to push and pull cut, not rock chop like we learned to do with western knives. An excellent resource on this stuff is the Japanese Knifre Imports Youtube channel. Here's a video on cutting techniques with Japanese knives - https://www.youtube.com/watch?v=6c4R...eakBYx&index=1. They also have a 30 video playlist (!) on knife sharpening if you're interested. If you want to get it professionally sharpened I'd find someone who knows Japanese knives. You do NOT want Joe Belt Grinder working on that.
