So, inspired by T-bone 's new acquisition ( https://pitmaster.amazingribs.com/fo...-arrived-today ) I pulled the trigger on a new Vacmaster VP215 this morning. According to the tracking numbers, it, some bags, and a cart for it should be here on Wednesday. It's coming FedEx and he always comes at the end of the day, so perhaps all I'll get done on Wednesday is get it out of the box. So I may actually have to wait until Thursday, which is going to suck!

Awesome! Congrats! Other than the hole in your wallet you won't be disappointed. Set up is actually pretty straight forward. You get a nice squeeze bottle to do the oil fill. I believe the oil fill bolt is a 14mm (I wrote it on a piece of tape and stuck it to the reservoir so I don't have to guess each time). After the initial oil fill, check the oil level after a dozen or so uses. I found that the reservoir needed a 'topping off' after the oil got fully distributed throughout the system.

PS. My VP215 continues to rock! This weekend I made a large batch of Brunswick stew...first time to make it and turned out excellent. The Boss gave it two thumbs up. Anyway, with the leftovers I split them equally between two of the large (10"x13") bags. Put them (unsealed) in to the refrigerator overnight to cool. Liquids being sealed have to be cooled or you're asking for a BIG mess (yes, I learned the hard way). The next morning I took one of the filler boards out of the chamber and placed a small block under the remaining board. This created a ramp inside the chamber. The ramp slightly extended above, but not over, the sealing bar. When putting the bag with the liquid on the ramp, it was a big help ensuring the stew stayed below the sealing area. I set the seal time to 15 seconds and it worked like a champ. Also, from my limited experience, I wouldn't fill a bag with liquids over 1/3 full with the bag standing up. That way when you lay it down to seal it, the liquid (hopefully) won't extend into the sealing area.

Your chamber style unit is so cool!!! They are so good, but to seal a whole brisket, the size and budget just didn't work for me.
