Whenever I see pros handling meat off the grill, they usually have some kind of shiny black gloves that allow them to rip the smoking hot meat up with their hands. Can any of you recommend a pair that you use and like?

Got these a month or two back since I was starting to stick burn with the KBQ. They're a bit more expensive, but washable, and I was able to pick up embers without feeling anything. For handling meat, I use G-Tek gloves over which I pull an XLarge size nitrile glove. When I'm done, the nitrile gloves get tossed and the G-Tek gloves underneath are clean. The G-Tek gloves launder well too.
To slip the nitrile gloves on easily, I sometimes powder the G-Tek gloves with a bit of flour. Easy pull on that way.
I've pulled pork taken right off the grill with my hands inside this glove combo, G-Tek with nitrile gloves over them. In fact, I usually lift meat right off the grill with the glove combo.
The only downside is if your hands are very large, you may not be able to find nitrile gloves big enough to go over the G-Teks.

johnec00 , I got my G-Tek gloves from my local hardware store. This year I bought gardening gloves with a similar design and am using them, since the G-Teks are starting to get sticky from so many trips to the wash machine after 3 years of use. They still work fine, though, if I rub a little flour on them before pulling the nitrile gloves over.

Dang, posted it before I could! This is basically what I do most of the time. I purchased a pair of fancy shmancy grilling gloves a couple of years ago, but I find that they're just plain awkward to use.
