The probe holes are small so you get a good tight fit. My probe for my PID controller is too small for the regular probe clips but is PLENTY tight in these dudes.
I typically lay the probes across the top of the meat and make sure the tip is far enough off as to not get a false reading. I would also tie the PID and Maverick/Smoke temp probes together. Now I can just get them close and take note of the difference.
