So it's annual bonus time at work, and while the wife and I have bigger plans for the majority of it, I'm taking a small piece of the loot for myself ($100 - $200) to feed my condition. I'm not going to add another smoker to the collection (yet), but I have had my eye on some accessories/gadgets, so I'll probably scratch one or two off the list:
Thermapen MK4 (I have a Thermopop)
Fireboard (I have a thermoworks Smoke)
Vacuum sealer
Meat slicer
Slicing knife
Boning knife
Those are the first that come to mind, what would you get? Have I overlooked a must-have (I already have an SnS, lol)?
I would do the knifes only because i have started my collection. The fireboard would be nice if i were wanting one i would wait to see if they do the fan control on it. A goood slicing knife will make nice thin slices like the slicer. A vac sealer is always a good investment. Thermoworks is having a open box sale going on now
I would get the vacuum sealer and a cheap electric rotary deli slicer. My leftovers get the deli slicer treatment for some really nice thin uniform cold cuts. Those two items would take you to about $220.
The vac sealer is a great thing to have if you dont have one. They will save you money by buying in bulk and repacking it the way you want. That would be top if i did not have one

I would get the Dexter Brisket Sword. 12" (under 30 bucks) and the Mad Cow boning knife. Cheap and they work well. The sword is perfect to slicing up a brisket, and the boning knife is perfect for trimming briskets and shoulders. It a had a nice, robust, non slip handle that makes using it very easy and ergonomic. Links are below.

Personally If you only have a thermopop I'd get an mk4. It's so much better than the pop. And definitely a vacuum sealer. Since I got the sealer it gets used all the time. Great money saver.
I have the 610 model (I believe). So far it has worked great. I got the non serrated blade and as of now it is still sitting in the original packaging. You probably don't need it.

Both of mine came with two blades - the non serrated blade was installed on the first and I didn't put the serrated on. It worked like a charm. I installed the serrated on my next one and have never used the non serrated.
How many of you at home. If it's two, I'd go with the vacuum sealer. If you have kids that eat leftovers before they have a chance to be left over, you may not need it. Of course, it's also very good for Sous viding.

I had to get rid of two things to be allowed to get mine a few years back due to cupboard space. The "his" and "hers" space heavily favors me but it's no longer allowed to infringe on "hers".
Food saver (or whatever brand you choose). Other than the coffee maker it is the only appliance on the counter. It gets used almost every day for re-packaging bulk meat items, leftovers, sous vide....
The vacuum sealer was hard to pick out, but after reading a billion reviews I decided to try a non-Food Saver brand to see if it can stack up for the price. Stay tuned for the results.
Out of the boning and slicing knives, the boning knife is more of an immediate need for me, so it won out. I split the difference with Spinaker suggestions and chose the Dexter brand.
