It went through the fat on my brisket like a hot knife thru butter. Next is the carving knife. In a few months.

Once you used a Shun, there's no going back! If you like veggies, seriously consider the Nakiri as your next knife. I use mine at least a few times each day. Williams Sonoma has the hollow ground version on sale for $99. Then get the slicer but you'll want a chef's knife too.

Congrats on the new weapon! They are great knives. I have the slicer and its a great knife. It just melts through Brisket. I love the look of that trimmer, it looks mean!

That's a beautiful knife. What "style" of knife is that?

@mgaretz: I just a acquired a Nakiri style knife a few weeks ago. You can slice vegetables so thin they only have one side.

Congrats NB. I got a shun fuji chef's knife as a wedding present and have absolutely never looked back. Next thing you know you'll be looking at water stones and stropping and down the rabbits hole you go...

I got to use a professional chef's Ken Onion Shun chef's knife and it was without a doubt the most comfortable knife I've ever used.

I love it. Cant wait until I can afford to buy more of them. It is so sharp. My wife was trimming some chicken the other day with it and someone (not me) bumped into her and she very cleanly sliced of about 1/16 of her fingertip.

I have the slicer and it's more like a Katana, than a knife. It's amazing when cutting briskets.
