    Test run on the junker with smoke generator. I planned on doing 2 whole chickens tonight, the only problem was the store didnt have any whole chickens, only the sickly looking "young" chickens. I think those are really the "organic free range" chickens that they cant sell. anyway. I bought a pkg of leg quarters. The empty pkg with the diaper in it weighed .75#, so I would say these have already been juiced. I plan on running them in the MES until about 135 the tossing them on the Weber Summit Gold (can I call it a WSG or will people think WTF?)

      Homemade apple Chips are burning fast and not feeding very good. Looks like I need to get bigger chunks next time. Good smoke. The MES cranked up on high is taking forever to get up to temp.

        Very unimpressed with the way that the cherry chips hung up in the tube. The only other cherry I have is about 3 years old. I have some apple I can use, but noy my 1st choice for pork loin. I will have to go find some maple I cut down 2 months ago to make bigger chips.. or God forbid.. buy some over priced Treager pellets

          Test #2 - pork loin with a hot Memphis rub and apple pellets. MES is cranked all the way up with 3 layers of welding blanket on it. Low-medium burn on a full tube of pellets. The other half of the loin is getting cured for Canadian Bacon.

            After a quick run up to 375 (on the crappy door gauge or about 300 rack temp), I now have it dialed in for 250. I know that this isnt the way to get a good smoke ring. This test is all about building bark on a crappy electric smoker... and smoke ring shouldnt be a problem.
