    Building a SnS pt2

    Okay, wow. I really contiplated even posting the question, and if I knew the outcome never would have. I apologize for offending everyone here, that's not what I meant to do...at all.

    You guys have all heard of people building things, right? Boats, furniture, houses..Yada Yada. It's the same enjoyment we all get from creating our own amazing tasting food, rather than going to a restaurant and buying it.

    The guy who makes his own boat can make an exact replica of any boat he wants, and he's going to enjoy it a heck of a lot more than if he had just went to the store and bought it.

    That same guy is going to face the same legal ramifications as a guy who draws a picture of Mickey Mouse at home for his kids...none.

    I was never in a million years considering reselling one.

    I don't want to stir up more trouble(never wanted to in the first place). I don't want to be exiled based off this, so again, I'm truly sorry to all offended. I'm obviously very new here so please consider this my mulligan.

    Most of us knew what you meant. No harm no foul. Thanks for popping back in to explain though, and you're right! We hope you'll stay an active member here now that everyone knows what's what.

      DennisComp what do you cook on and do you have any favorite foods to cook? It you have any photos of recent cooks it would be great if you would post some of them.           Dennis, I got your tone right the first read. As a fellow person that likes building stuff it many times is not the cost but rather the creation. I just hope your welds look better than mine.

            Ditto. I read your post to mean you were looking for DIY plans for the SnS and not engaging in corporate espionage. Or are you really working for the Chinese?

              DennisComp - thanks for clarifying things. This is a very touchy area for me. There are simply too many patent trolls in this world. This is best left in the rear view.

                How would a patent troll be related to this? A patent troll buys others patents and then sues based on infringement of said patent without ever contributing to the industry. That was never the case even if Denniscomp tried to sell his version.

              Thanks guys, and I'm honestly just getting in to "big boy" grilling/smoking.

              I really have had pretty luck grilling pork chops, as well as pork tenderloin. I made some pretty amazing chicken wings last week as well.

              The wife unfortunately doesn't quite like the smoke flavor...looking for a new wife already, haha...so whatever I cook is normally just for myself.

              I have a rack of ribs in the fridge that I'm going to smoke in a day or so. I did a test run smoking with some hamburgers just so I didn't waste expensive meat, and they came out awesome.

                Really new to charcoal grilling, so I've been trying more so to learn heat control. I've been grilling on a propane grill prior, and haven't touched the propane grill since I got the kettle. Nowhere near an expert obviously but I'm "self teaching" and learning through this site and now forum. I've cooked a lot more than this, I just need to remember to take more pictures from now on.

                I don't seen nothing wrong with what is in those pics DennisComp and for your wife not liking the smoke flavor try using a fruit wood like apple, peach etc. It will be a sweeter mild flavor and maybe burning smaller chunk until she gets use to it. If that don't work then start looking for a new wife. 🙂

                  What DWC said. Alder works, too. A few chips instead of several large chunks will give a hint of wood without overwhelming. For some "delicate" meats - like pork tenderloin - I skip the wood altogether and just let the marinade or NON-smoked, stovetop sauce enhance the natural meat flavor.

                    Technique when useing wood chunks... For less smoke flavor put the wood chunk on 10 to 15 minutes before the food goes on. Place the chunk on the food grate above the HOT charcoal. This will cause the chunk to get really hot before it burns and you'll have more good smoke and less bad smoke.

                    Once the food is on watch the smoke. It should be thin white or blue in color. If it's an opaque white/gray/black you're getting bad smoke and should take the chunk off immediately. If it's thin white or blue let the food cook with the smoke for 10 to 15 minutes, then use tongs to take the chunk out of the kettle. This will give you a nice hint of smoke without being overpowering.
