    So I'm guessing that the knives from the late night Cutlery Corner show......125 knives for a hundred bucks!.....wouldn't be up to snuff, right?

      or better yet "as seen on tv" my tv knife can cut cans in half as well as tomatoes! LOL

      Don't ask me how much Ive spent on toy trains.

        I have two Kajiwara blue #2 knives (62 HRC), two Fujiwara Nashiji blades (white #1 at 65 HRC), and a couple of other carbon knives. Once you learn to sharpen and collect a good set of sharpening stones, they blow other knives away. There are super hard stainless knives (made of stuff like HAP 40 and ZDP-189) , but they are much harder to sharpen. Keep in mind carbon knives take a lot of care, especially those with high Rockwell numbers (German steel is pretty soft, 50-54 HRC, so it is very difficult to chip). I like Chef Knives to Go, they have lots of tutorials for sharpening and some beautiful steel! http://www.chefknivestogo.com/

          Ha! Yea, Wushtof classic guy here, I build acoustic guitars, and I'm a Canon guy myself! LOL. I do like my Wushtof classic's, but for what I usually do, I use my cheap Dexter, or one of my trusty Old Hickory's. Wushtof's are scary sharp too. My wife cut her finger to the bone just unpacking the box. Now I'm scared of them anyhow.

              I use a Mcusta Zanmai Pro 9.4in Gyuto as my everyday chef's knife. I also have the petty and the 9.4in slicer. They are all stainless steel. I'm lazy so carbon is out of the question for me, its too much upkeep for the amount of times I use a knife. The stainless keeps its edge great. I usually send them out 1x per year to Korin to get professionally sharpened, plus they'll fix any nicks you might get on the edge and I'll keep up with my sharpening stones once in a while if I feel they are getting dull. I have an assortment of Wusthof and mercer knives for my beaters (boning, bread, if I need to do any butchery).

It is 12" from Point to Handle, 2 1/4" wide at the handle and -1/4" on the back and 3/16" X 7/8" X 5" on the Tang! The 5" Handle is secured with 3 Rivets! I believe the Handle is Maple but I am not Sure! The knife is sharp and doesn't appear to have been misused or abused! A light surface corrosion uniform over the entire Blade! I think 0000 Steel Wool and Oil will Clean the Knife so it Shines Like a Diamond in a Pigs Pa'Toot! It Weighs 1 Lb & 1.9 Oz! More after I Clean it Up! Eat Well and Prosper! From a Backyard Cremator in Fargo ND, Dan
