So I'm guessing that the knives from the late night Cutlery Corner show......125 knives for a hundred bucks!.....wouldn't be up to snuff, right?

I have two Kajiwara blue #2 knives (62 HRC), two Fujiwara Nashiji blades (white #1 at 65 HRC), and a couple of other carbon knives. Once you learn to sharpen and collect a good set of sharpening stones, they blow other knives away. There are super hard stainless knives (made of stuff like HAP 40 and ZDP-189) , but they are much harder to sharpen. Keep in mind carbon knives take a lot of care, especially those with high Rockwell numbers (German steel is pretty soft, 50-54 HRC, so it is very difficult to chip). I like Chef Knives to Go, they have lots of tutorials for sharpening and some beautiful steel! http://www.chefknivestogo.com/

Ha! Yea, Wushtof classic guy here, I build acoustic guitars, and I'm a Canon guy myself! LOL. I do like my Wushtof classic's, but for what I usually do, I use my cheap Dexter, or one of my trusty Old Hickory's. Wushtof's are scary sharp too. My wife cut her finger to the bone just unpacking the box. Now I'm scared of them anyhow.Originally posted by billg71 View PostJust an update:
So I signed up on Bob's site for notification of new auctions, got an email yesterday about an upcoming auction of a meteorite-steel custom knife opening today.
Caught the end of the auction, the 8" chefs knife sold for $66,000. Yes folks, that's sixty six thousand and no/100 US$ if you're writing a check.
I'll stick to collecting Martin guitars.
And Nikon lenses.

Started Low-N-Slow BBQ in 2012. Obviously, it's taken hold (in chronological order:
1.) A pair of Weber Smokey Mountain 22.5's
2.) #LilTex, a 22" Expensive Offset Smoker (looks like a Yoder Witicha)
3.) #WhoDat1, a HUGE Gravity Fed Insulated Cabinet Smoker (cooking chamber 3'x2'x6')
4.) A Full Size Commercial Dryer/converted to Vertical Smoker.
5.) Jambo Backyard stickburner (my FAVORITE Pit so far)
6.) GrillMeister, a huge 24"x48" Adjustable, Charcoal Grill from Pitmaker.com
7.) 22" Weber Kettle with Slow-N-Sear
8.) Vault insulated reverse-flow cabinet smoker from Pitmaker
9.) BarbecueFiretruck...under development
10.) 26 foot BBQ Vending Trailer equipped with HUGE Myron Mixon 72xc smoker is HERE, Oct 2016!
11.) Opened www.PaulsRibShackBarbecue.com Food Trailer officially in March 2017
12.) Austin Smoke Works 500 Gallon Propane Tank Offset Smoker, named "Lucille" as travel pit for PaulsRibShack, Oct 2018.
12.) Opening Brick & Mortar location at 4800 Nelson Rd, Spring 2019. Had a pair of 1,000 Gallon Austin Smoke Works pits, both in RibShackRed for our new place!
Fabulous Backlit Thermapens, several Maverick Remote Thermometers (don't use any remotes anymore), Thermoworks Smoke, Other Thermoworks toys, Vacuum sealer, lots and lots of equipment...
I'm loving using BBQ to make friends and build connections.
I have #theRibList where I keep a list of new and old friends and whenever I'm cooking, I make 1 to 20 extra and share the joy.

- 22" WSM w/ cajun bandit door/hinge
- 18" Jumbo Joe
- Fireboard w/ fan
- Thermopen One

I use a Mcusta Zanmai Pro 9.4in Gyuto as my everyday chef's knife. I also have the petty and the 9.4in slicer. They are all stainless steel. I'm lazy so carbon is out of the question for me, its too much upkeep for the amount of times I use a knife. The stainless keeps its edge great. I usually send them out 1x per year to Korin to get professionally sharpened, plus they'll fix any nicks you might get on the edge and I'll keep up with my sharpening stones once in a while if I feel they are getting dull. I have an assortment of Wusthof and mercer knives for my beaters (boning, bread, if I need to do any butchery).
I love this knife
I will own you one day
