I'm purchasing a used Broil-King Signet 20 and I plan to upgrade it with Grillgrates. I mostly cook on my Weber Performer kettle but I want to use the gasser for preparing sides and for cooking chicken and fish. The question for GG users is: do you recommend using the Ggrates on top of the existing grill grates or do recommend getting GG's custom fit?

7x57mm - I've used my Grill Grates for a few years now. I used to have a Primo Oval XL that had custom fit Grill Grats. I gave away that Primo but kept the Grill Grates. They work wonderfully in my Komodo Kamado 32 BB, a much bigger grill than the Primo Obal XL. Grill Grates sit just fine on the grate of my KK 32.
Grill grates is a great product and I highly recommend them for all kamado users and all others who are looking for great sears. When turned over, Grill Grates makes a great surface for smash burgers etc.

I have 4 GG's on my Weber Genesis Silver B. They sit on top of the SS grates. Frequently, I'll pull 2 and use them on top of the 22 in Weber Kettle's stainless grate. #1 is not a grate
( get it? ) fan of "grill marks", so I'll turn them upside down and place them over the SnS when I do a Reverse Sear.
I agree with Jerod Broussard that custom fit covers as much surface area as possible. Fortunately, I can make do with just two on the kettle.

The steaks below weren't thick enough for a Reverse Sear, so I just cooked them over the SnS until they were done. Unfortunately, ( laugh ) I was a little slow and they ended up "Medium".
