I recently acquired some hooks for hanging meat rather than placing on racks. Tthought i would try for pork belly/bacon but was wondering if folks use for other meats (ribs, whole chickens, etc). and partcularily for pork belly bacon. Any benefits for a better end product?

+1 on chickens. In my Bronco I have also hung ribs, which I prefer, I tried a Tri Tip which I did not like.

I like hooking and hanging in my PBC. The drippings going onto the fire has 3 advantages.
1 the grease burns up minimizing grease clean up.
2.the grease creates “grill smoke” which produces great flavor
3. Because it’s not using a diffuser the meat is exposed directly to the radiant heat and picks up great sear/bark.
