Have used Mo's Smoking pouch a couple times now and it works so well I just need to give it a mention. With the weather reverting to winter this weekend I fired up my two burner gas stove with a Camp Chef grill box on our screened in patio to grill some Italian Sausages. Set the stove / grill box for two zone cooking by lighting one burner and leaving the other off. Added a couple large pinches of Mo's bourbon barrel chips to the pouch, set it on the hot side until it just started to smoke and then moved it to the cold side. Added the sausage to the cold side and let it smoke with the grill box closed for about 20 minutes and then finished them on the hot side to a 160 internal. Best grilled sausage I've ever made and with the wood chip ash contained in the pouch cleanup is so easy. Highly recommend this product for those times when cooking on a gas grill is what's for dinner.

Santa left me one this year. I was thinking about using it for cold smoking things that CAN be cold smoked (like cheese). Anyone use this like the smoking tube? Suggestions on lighting the chips (have to get chips, Santa didn't include them).

I got two of em. Love em. I use one after another so I don't have to wait for it to cool down. Just be very warned, let it cool at least 30 mins before try to touch em. They look like they are cool but they are not. (Just ask my fingers). Use tongs at all times. Don't take a chance. They stay hot long after the smoke stops. I just light mine over my side burner and get the smoke going if I need to. Or slide it between my grill grates
