no smoke ring on UDS? and Thin blue smoke.

I moved up from my el chepo to a UDS. I love the flavor from the UDS, tons of good food coming off of it. And im loving the efficiency of it. I did the Big poppa kit. IM finding it a little hard to get the smoke thin enough for my liking and everything has no ring. Although plenty of smoke flavor. any thoughts?

Welcome jrobertson! Have you read the article on smoke ring, what causes it and so forth http://amazingribs.com/tips_and_tech...moke_ring.html ? Check it out. What meat are you using, how do you prepare it before smoking, and is it frozen or fresh?

Thanks for the reply. I will re-read that post. i have used frozen and fresh. And typically throw the meat on cold. I have done beef and pork ribs, and butts on the UDS. brisket this weekend.

That's surely a puzzler why no smoke ring. Do you dry brine? (salt the meat for 1-2hrs, preferably 12-24hrs before smoking?

I don't typically brine the meats i have tried so far on it. On the el cheapo i got the ring. just not on the UDS. of course i have trouble getting the smoke as thin as i would like. i think i need to use less wood.
