Wow! What an outpouring of comments and info, thanks. Now that I have installed a gasket on the lid of the kettle I think I'll just pass the probe leads under the lid. The gasket should provide enough cushion to prevent a kink.

Hey Siouxfan do you think you could provide a link to the gasket you bought? I like the looks of this and it will help me kill two birds with one stone; a way to seal my leaky performer lid without binder clips and a path for my probe wires. Thanks for the idea!

Another thought, (and it didn't hurt too much). I've installed a gasket like the one Siouxfan has. I think I will just run the cables over the rim of the kettle and set the top with gasket in place. There should be enough give in the gasket to keep the seal. I will report after dinner tonight.

I took Jerod's advice to "drill baby drill". A 3/8" hole was just the right size for the probe BUT, it's wire prevented a second probe from going through. So I used a small diameter rat tail file and cut a notch just deep enough for the wire to "get out of the way". I use a small wad of foil to fill the hole if I want to seal it up tight.
