    Sansaire Searing Kit

    Picked up my latest toy yesterday - the Sansaire Searing Kit. https://sansaire.com/sansaire-searing-kit/ $159 direct or through Sur La Table.

    I tried it for the first time last night on a tri-tip (what else?) that I had SV'd all day. (Came out very tender by the way.)

    The torch is a custom version of a Bernzomatic torch that features push-button ignition and a regulator so it doesn't flame out when tipped. It also comes with a large propane cylinder, a searing rack and drip tray. The rack and the drip tray slide together to make a nice stable base to hold the food while searing. The rack is made of super-thick stainless steel and the tray is enameled like a broiler pan.

    It took about 5 minutes to get a nice brown color on the whole tri-tip. One of the nice things about the torch vs my previous method of screaming hot GrillGrates is that you can more easily get the sides and ends and other non-flat areas. It's also considerably faster when you count not having to pre-heat the gas grill. I'm also not outside in the cold.

    So far I am very happy with it.

    mgaretz - I'm glad that this solution works for you. That looks like a quality product. One would think that for the $159 price.

    I've got essentially the same thing and use it to great effect with my SV cooks. All I have is the same MAPP-Pro torch I use to lite my kamados and I use a Bradley rack over a cookie sheet. It's all in cost is substantially less than the Sansaire. That said, I generally don't use my torch to sear ... only when it's really raining hard or when it's really cold outside. I generally sear my SV cooks in my kamados.

    I think that when all is said and done, this is a good fit for SV cooks when it's cold or wet outside. And there's nothing wrong with staying warm and dry, right? Congrats on the new toy! Here's to many wonderful cooks with it.

        This is very interesting Mark. Thanks for sharing the video. What a great alternative when you want to eat grilled food and the weather is nasty. Do you have to take the searing effect in to account when determining the temp of the SV cook in order to get the final temp where you want it?

          I assume that you do, but I don't think it raises the temp as much as it would if you put it on a screaming hot grill because the ambient temp for everywhere but where the torch is would be a lot cooler.

        As promised, here are some shots of the torch in action, and the finished tri-tip and meal. I timed the searing this time and it took 4 minutes to do the whole tri-tip. (If it looks funny, I trimmed three this morning (one to cook and two to freeze and I cut the tips off all three to save for stew.)

        I really like the looks of their searing rack... I just can't justify the price tag of the kit to get one, seeing as I already own a Bernzomatic Heat Shrink. (BZ4500HS) Essentially the same thing but uglier. LOL

        Guess I'll keep my cast iron grill pan until I find something else. Maybe they'll make it available separately one o' these days.

          Spinaker Oh yeah, I can easily bodge something together...I just like the look of theirs...and the way it fits together. And yes, discovered the model numbers when searching for that rack... As I said, same but mine is uglier.
