    MCS/MAS Indulgence

I've not indulged in More Cooker or More Accessory Syndrome in quite some time. Today SWMBO tells me I need to order something for my birthday on Thursday that I want, or I will get a random shirt or Amazon gift card, haha. So, a trip to the Ceramic Grill Store website this morning, and boom! Some items I've been eying are on the way.

Not much, but then, I don't need much. I've got all the grills I can use at the moment, I just gotta use them more effectively!

I think these items will make cooking on the SNS Deluxe Kamado more enjoyable by expanding the indirect zone (and catch drips) while cooking in kamado mode, and I've wanted want to these vertical rotisserie gizmos for doing al pastor and such for a while.

Next time I will chase after a Santa Maria attachment for the Weber kettle...

Nice! But what are the ceramic spacers for?

They are used to space the drip pan form the diffuser on a Kamado which keeps the drip pan from over heating.

They are to put an air gap between the drip pan and the ceramic diffuser on the kamado. Set them on the diffuser, then the drip pan on them. Keeps the drip pan from getting quite so hot.

I am really hoping this will help the SNS Kamado in kamado mode, as the design of the deflector is significantly different than on any other kamado I have seen, and results in a much larger "air gap" between the central body of the deflector and the edges of the cooking grate, aside from the 3 "legs" that it sits on. You really cannot let your meat hang out past the deflector in those areas, and I often find myself putting makeshift foil or foil pans on top of the deflector to extend it in areas. The gap where hot air comes up around the deflector in those 3 areas is probably 4 inches (10 cm). The 18" drip pan should drop the air gap to about half that (2 inches or 5 cm). Plus help with cleanup and keeping the ceramic diffuser clean.

I think that the design of the SNS Kamado diffuser could use a change to increase the central diameter significantly. But then, I feel that deflector is kinda secondary to use of the SNS insert in the minds of the design team at SNSGrills.

I have substituted a Baking Steel for a deflector after I broke several ceramic ones for my Kamado. You might want to see if they have a size that would fit what you are talking about. They do have round ones.

Jim White the design of the SNS Kamado is such that I really have to use their custom deflector. There is no "spider" or place to hang a traditional deflector or baking steel from. The deflector has legs to raise it above the "upper" charcoal grate, which is what holds the SNS insert at the right level it would be in a kettle. And without those legs, the deflector would literally be sitting right on top of the lump fire in the bottom when I build the fire on the lower charcoal grate.

          Well that's bad luck.

Henrik you can see the problem I am talking about with the SNSGrills deflector in this picture. On most kamados the deflector pushes out almost to the edge of the grill, giving you more of the main cooking grate as usable indirect area.

Jim, I use the spacers and have one of their drip pans. I think you will like the meat stick. It makes a pretty good chicken shawarma.

Well, I got all this stuff yesterday, and all I can say is the drip pan is too pretty almost to use as a drip pan! It's polished to a mirror finish, and could easily be a serving tray of some sort, haha.

The spike looks good too, and I'll be putting all this to use soon on the kamado.
