While in Hatch, do go to Sparky's--"famous" for green chile cheese burgers (GCCB), plus good BBQ and "regular" burgers. In my experience, Sparky's is pretty much the only good restaurant in town. About two hours north of Hatch is the tiny town of San Antonio with two "famous" for GCCBs places--The Buckhorn and the Owl--you cannot miss them as you drive thru San Antonio. In Santa Fe (a great eating town), the Shed is a must stop for New Mexican food and it's right on The Plaza. Also in Santa Fe is Senor Murphy's, a confectioner with chocolates and red or green chile peanut brittle. YUM! Throughout NM, you'll find burger joints named Blake's Lotaburger; they put Mickey D's to shame. GCCBs are also found there.

IMHO, the best places to stay are in Las Cruces and barelfly has already mentioned several eateries there, to which I'd add DH Lescombes winery/restaurant. A lot of pistachios and pecans are grown around Las Cruces and further north.. The NMSU Chile Pepper Institute is a worthwhile stop. Oh, do catch the Hatch parade--small town hokey, but fun to do once. The Festival will have tons of vendors/demos and is located just west of Hatch in a large covered facility. Learn to tie a ristra!

        Enjoy!

White Sands is big time worth seeing. Drive into it and be immersed in white!
