Alrighty folks, here’s all the information you need to attend the next Texas MeatUp, where good friends and great BBQ will gather. It will actually be held in Spring, Tx, on the North side of Houston. There’s a great hotel in Spring called The Homewood Suites. It has all the amenities we’re looking for…nice rooms with a
Large Big Green Egg, Weber Performer Deluxe, Weber Smokey Joe Silver, Fireboard Drive, 3 DigiQs, lots of Thermapens, and too much other stuff to mention.
I’m set. Flight, hotel, rental car. Arriving late afternoon Wednesday, looking for BBQ or Tex-Mex for dinner Wednesday; there’s a place called Mexican Mom Cocina Tradicional that looks like a sure winner. But who knows, it’s still January.
Hotel reservation for my wife, Jane and I made. Looking forward to finally meeting y’all. Now excuse me while I go buy the plane tickets. We are booked Thursday-Sunday.
Scotch: Current favorite- The Arran (anything by them), Glenmorangie 12yr Lasanta, sherry cask finished. The Balvenie Double Wood, also like Oban 18yr, and The Glenlivet Nadurra (Oloroso sherry cask finished) among others. Neat please.

Please count me in. I live here, so no hotel needed. We certainly need to do Corkscrew and Tejas in Tomball. I prefer the Truth on the road to Brenham. It is super way easier to get into Tejas on a Thursday. Go early to Corkscrew on Saturday (say 10:30 arrival) and you will be fine. Let me know if I can help w arrangements.

I have a guy who I buy smoked cheese from. This is an INTERNATIONAL GOLD MEDAL WINNING PRODUCT. Unfortunately, he is going out of business later this month.
This stuff is incredible. It’s addictive. I’ve always been able to pick it up at the Farmer’s Market on Sundays during the summer, but no more.
If anyone heading to the Meat Up wants to look the website over, if there’s anything you want, let me know and I’ll bring it out with me. The sleeper product there is the Smoked Sharp American, but everything is beyond belief delicious. It’s a smoked-right-through cheese, he has a proprietary process he had to get approved. I’m heading down on Monday, but it’s only a couple miles away and any time this next week is good. You can ask here, or PM me.
I will look, likely order something. I will also look to see if we can ship directly, and post if I find we can do. Would be easier for both of us, and one of the commenters on the screenshots asks if still going to be able to order and ship.
It will be easy for me to bring it, I brought a huge load of cheese last time. I’m bringing along the insulated San Marcos bag, and I have more of those if I need them.
This stuff lasts forever. I found a half piece of smoked American in the bottom of my cheese drawer, that I bought at the end of last summer, wrapped in a piece of Glad Wrap. It is perfectly fine and I’m using it on a burger tonight. Trust me, a few hours in an insulated bag on a plane won’t make no never mind with this.
